This recipe is for a very easy no-bake cookie that children really love. Use this recipe as a template and blend different ingredients together into a tasty dough perfect for molding into balls. Get creative with what you find in your own kitchen.
Oatmeal Currant Cookie
1/4 cup almonds
- 1 cup oats
- 2 T currants
- 2 T dried apple, soaked for 20 minutes in hot water then drained and diced
- 2 tsp brown rice syrup
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla (opt)
Makes about 12.
1. Process almonds in food processor until finely ground. Add oats and process again until mostly fine.
2. Add currants, diced apple, brown rice syrup, cinnamon, and vanilla if using. Process until well mixed and able to form balls.
3. Gather spoonfuls and press together with fingers to form 1″ size balls. If the mixture doesn’t come together easily you may need to add small amounts of hot water to get the right consistency. Eat as is or let sit for at least one hour to help the flavors meld and so the cookie can become more solid.
Use any nuts or seed combinations. You can soak the seeds and nuts before using to make them more digestible. You can also toast them to add a stronger flavor. With soaking you may need to increase the amount of oats if the nuts and seeds seem really moist.
