This recipe is an adaptation of one found in Vegetarian Cooking for Everyone by Deborah Madison. My favorite section of this cookbook is when she describes each vegetable and then gives numerous simple ways to prepare each one. I have changed the sweetener and replaced the butter with avocado oil. I love having a few simple ways to cook the same vegetable. Carrot Circles with Thyme 4 carrots, washed and sliced into 1/2″ circles (peeling optional) 1 tsp avocado oil (optional) Pinch of sea salt 1/2 tsp thyme 1-2 tsp maple syrup 1-2 Tbsp water
  1. Saute the carrot slices for a minute or two in a medium saute pan. You can use either oil or water saute.
  2. Add a pinch of sea salt, thyme, maple syrup and water. When the water starts boiling, add a cover and reduce heat to simmer.
  3. Monitor the level of liquid in the pan and add a little more water if needed. Let cook until carrots are the desired softness.

Carrot Circles with Thyme

Ingredients
  

  • 4 carrots washed and sliced into 1/2" circles (peeling optional)
  • 1 tsp avocado oil optional
  • Pinch of sea salt
  • 1/2 tsp thyme
  • 1-2 tsp maple syrup
  • 1-2 Tbsp water

Instructions
