Carrot Circles with Thyme

Ingredients
  

  • 4 carrots washed and sliced into 1/2" circles (peeling optional)
  • 1 tsp avocado oil optional
  • Pinch of sea salt
  • 1/2 tsp thyme
  • 1-2 tsp maple syrup
  • 1-2 Tbsp water

Instructions
 

  • Saute the carrot slices for a minute or two in a medium saute pan. You can use either oil or water saute.
  • Add a pinch of sea salt, thyme, maple syrup and water. When the water starts boiling, add a cover and reduce heat to simmer.
  • Monitor the level of liquid in the pan and add a little more water if needed. Let cook until carrots are the desired softness.
