This is a very simple way to prepare red cabbage and a lot of children I know love it. If I am making some for myself, too, I will pull mine out when it is still crunchy and let it cook a little longer for children who like their vegetables softer.

Sweet and Sour Red Cabbage

  • 2 cups red cabbage, sliced ¼ inch thick
  • 1-1/2 tsp brown rice vinegar

1. In small saucepan bring about ¼ inch of water to a boil. Add the red cabbage and brown rice vinegar. Cover and turn heat down to a simmer.

2. Let simmer until the cabbage is the right texture for the age of your child. I let it cook until just past chewy for most young children, but some children really like their vegetables crunchy. Be very careful to not let cook too long because it will turn to mush fairly quickly.

Variation:  Add thinly sliced green apple or a few tbsp of currants in the beginning.
