I hope you are enjoying these peeks into Lena’s lunches. I know sometimes we can get into lunchbox ruts and even one new idea can help.
- Corn Cakes
- Hummus (I send a spoon because sometimes she just eats it straight instead of dipping the corn cakes.)
- Carrot and Currant Salad
- Green peas (otherwise known as green seeds)
- Fried Polenta
- White Beans. Sauté minced onion and finely diced carrot in olive oil with a pinch of sea salt. When onion and carrot are cooked, add a cup or two of home cooked beans and a little cooking liquid. Simmer for about 5 minutes.
- Sautéed green cabbage with a sprinkle of currants and balsamic vinegar.
- Steamed broccoli.
