Lena’s Lunchbox 3 – Vegan MoFo

I hope you are enjoying these peeks into Lena’s lunches. I know sometimes we can get into lunchbox ruts and even one new idea can help.


Lunch #1

  • Corn Cakes
  • Hummus (I send a spoon because sometimes she just eats it straight instead of dipping the corn cakes.)
  • Carrot and Currant Salad
  • Green peas (otherwise known as green seeds)


Lunch #2

  • Fried Polenta
  • White Beans.  Sauté minced onion and finely diced carrot in olive oil with a pinch of sea salt. When onion and carrot are cooked, add a cup or two of home cooked beans and a little cooking liquid. Simmer for about 5 minutes.
  • Sautéed green cabbage with a sprinkle of currants and balsamic vinegar.
  • Steamed broccoli.
